What if the problem isn’t what you eat, but how you choose?

Every day we’re bombarded with new dietary advice. One day a food is hailed as a ‘superfood’; the next, it’s called into question. Some people cut out gluten, others carbohydrates, others fats, and others fruit. Some foods are praised to the skies, whilst others are labelled ‘poison’.

Amidst all this, it’s easy to feel confused and end up eating out of fear rather than with awareness.

What if there were a different way?

In this course, you won’t find lists of ‘allowed’ or ‘forbidden’ foods to learn by heart. Instead, you’ll learn to observe, understand and reflect. You’ll discover the logic behind nutrition, how food affects more than just the body, and how to make conscious choices based on your needs, the stage of life you’re at and the goals you wish to achieve.

Because once you understand the principles, you no longer need to chase every new dietary trend. You’ll have the tools to think for yourself, adapt what you learn and approach food with greater peace of mind and freedom – without unnecessary sacrifices or rigid rules, but with responsibility and awareness.

A different way of looking at food

In this course, we will explore food from a different perspective to the one we are used to.

As well as nutrients, we will learn to observe the energetic quality of foods, their effect on the body, and the way in which they can influence vitality, balance and wellbeing in everyday life.

It is not about memorising rules or classifications, but about developing the ability to observe, experiment and understand how food interacts with each of us.

The aim is to become increasingly independent in our choices, learning to adapt our diet to the different stages of life, changes in the body and the needs of the moment.

  • Lists of ‘good’ or ‘bad’ foods.
  • One-size-fits-all solutions that work for everyone.
  • A course in clinical nutrition or a treatment programme for medical conditions.

This course does not aim to tell you what to think about food. It aims to teach you how to observe. Because it is through observation, practice and direct experience that an understanding develops which will stay with you long after the course has ended.

The approach taken is based on the principles of the macrobiotic tradition and on direct observation of the effects of food, rather than on memorising facts or biochemical explanations.

My journey with food

I first came across Macrobiotics in 2021. At the time, I wasn’t specifically looking for a new dietary approach in the technical sense, but I certainly benefited from what I learnt.

I began to apply its principles in a practical way, particularly in the kitchen. Not as a rigid system to follow, but as a language to explore through direct experience.

Over time, I observed how food influenced not only my health, wellbeing and physical energy, but also my mental clarity, emotional stability and the overall quality of my daily life.

I discovered that it is not strict rules and deprivation that make the difference, but having the power to choose and doing so consciously.

Since 2023, I have been teaching this approach to mindful eating, incorporating it into courses and one-to-one programmes. Teaching has become a natural extension of my own learning process: every group, every person and every experience has continued to refine the way I observe and understand the relationship between food and wellbeing.

Today, I continue to work in this way: through practice, observation and sharing. Without rigidly separating theory from experience, but allowing direct contact with food and with people to guide my understanding.
